- 1 tablespoon fresh ginger (grated)
- 1 red bell pepper (thinly sliced)
- 1/2 cup snap peas (trimmed)
- 1/4 cup fresh cilantro (chopped)
- 2 green onions (sliced)
- Salt and pepper to taste
Coconut Sauce:
- 1 can (13.5 oz) coconut milk
- 1 tablespoon fish sauce
- 1 tablespoon soy sauce
- 1 tablespoon lime juice
- 1 teaspoon brown sugar
Instructions
- Cook the Rice Noodles: Prepare the rice noodles according to package instructions, drain, and set aside.
- Sauté Aromatics: In a large skillet, sauté lemongrass, garlic, and ginger until fragrant. Add red bell pepper and snap peas, cook briefly.
- Make Coconut Sauce: Add coconut milk, fish sauce, soy sauce, lime juice, and brown sugar. Simmer and add shrimp to cook.
