Chicken Stew:

  • 2 tablespoons olive oil
  • 1 1/2 pounds boneless, skinless chicken thighs, cut into chunks
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 3 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 1 cup baby potatoes, halved
  • 4 cups chicken broth
  • juice and zest of 1 lemon
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • salt and freshly ground black pepper to taste
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Heat olive oil: In a large pot over medium-high heat, add olive oil. Brown the chicken chunks on all sides, about 5-7 minutes. Remove and set aside.
  2. Sauté aromatics: In the same pot, sauté the onion and garlic until softened, about 3-4 minutes.
  3. Add vegetables: Add carrots, celery, and baby potatoes, then return the chicken to the pot.
  4. Simmer: Pour in chicken broth, lemon juice, lemon zest, thyme, and oregano. Bring to a boil, then simmer covered for 30-35 minutes until chicken is cooked through and vegetables are tender.
  5. Season and serve: Season with salt and pepper. Garnish with fresh parsley before serving.

Notes

  • For a thicker stew, mash some of the potatoes before serving.
  • Add green beans or peas in the last 10 minutes of cooking for extra vegetables.
