- 1 medium yellow onion, diced
- 2 cloves garlic, minced

- 6 cups vegetable or chicken broth
Tortellini and Seasonings:
- 1 package (9 ounces) refrigerated cheese tortellini
- 4 cups fresh baby spinach or kale
- zest and juice of 1 large lemon
- 1/4 teaspoon crushed red pepper flakes (optional)
- salt and black pepper to taste
Serving Suggestions:
- freshly grated Parmesan cheese for serving
- chopped fresh parsley for garnish (optional)
Instructions
- Sauté Vegetables: Heat olive oil in a large pot. Sauté onion and carrots until softened. Add garlic and cook until fragrant.
- Add Broth and Tortellini: Pour in broth and bring to a boil. Add tortellini, cook until tender.
- Finish Soup: Reduce heat, add spinach or kale until wilted. Stir in lemon zest, juice, and seasonings. Serve topped with Parmesan and parsley.
