Lentil Curry Ingredients:

  • 1 1/2 cups dried brown or green lentils, rinsed
  • 1 tablespoon vegetable oil or coconut oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 2 tablespoons curry powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 can (14.5 ounces) diced tomatoes
  • 1 can (13.5 ounces) coconut milk
  • 3 cups vegetable broth
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped fresh cilantro for garnish

Instructions

  1. Heat Oil and Saute Aromatics: In a large pot, heat oil, then sauté onion until soft. Add garlic and ginger, cook until fragrant.
  2. Add Spices and Tomatoes: Stir in curry powder, cumin, turmeric, and cayenne. Add diced tomatoes.
  3. Combine Ingredients: Pour in coconut milk, vegetable broth, lentils, salt, and pepper. Simmer until lentils are tender.
  4. Finish and Serve: Stir in lemon juice, adjust seasoning, and garnish with cilantro before serving.
