Lentil Stew Ingredients:
- 1 1/2 cups dried brown or green lentils, rinsed
- 2 tablespoons olive oil
- 1 medium onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 1 (14.5-ounce) can diced tomatoes with juices
- 6 cups vegetable or chicken broth
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon dried thyme
- 1 bay leaf
- Salt and black pepper to taste
- 2 cups chopped fresh spinach or kale
- Juice of 1/2 lemon
- 2 tablespoons chopped fresh parsley
Instructions
- Saute Vegetables: In a large pot or Dutch oven, heat olive oil over medium heat. Add onion, carrots, and celery, and cook until softened. Add garlic and cook until fragrant.
- Add Ingredients: Stir in lentils, tomatoes, broth, cumin, paprika, thyme, and bay leaf. Bring to a boil, then simmer for 30-35 minutes.
- Add Spinach: Stir in spinach or kale and cook until wilted. Season with salt, pepper, and lemon juice.
