Lentil Stew Ingredients:

  • 1 1/2 cups dried brown or green lentils, rinsed
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 1 (14.5-ounce) can diced tomatoes with juices
  • 6 cups vegetable or chicken broth
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme
  • 1 bay leaf
  • Salt and black pepper to taste
  • 2 cups chopped fresh spinach or kale
  • Juice of 1/2 lemon
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Saute Vegetables: In a large pot or Dutch oven, heat olive oil over medium heat. Add onion, carrots, and celery, and cook until softened. Add garlic and cook until fragrant.
  2. Add Ingredients: Stir in lentils, tomatoes, broth, cumin, paprika, thyme, and bay leaf. Bring to a boil, then simmer for 30-35 minutes.
  3. Add Spinach: Stir in spinach or kale and cook until wilted. Season with salt, pepper, and lemon juice.
  4. Serve: Remove bay leaf, ladle into bowls, and garnish with parsley. Enjoy with crusty bread.
