Chicken Salad:

  • 2 cups cooked chicken breast, diced or shredded
  • 1/4 cup plain Greek yogurt
  • 2 tablespoons light mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon honey
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup finely diced celery
  • 1/4 cup finely diced red onion
  • 1/4 cup chopped fresh parsley
  • 1 tablespoon chopped fresh dill (optional)

Instructions

  1. In a large bowl, whisk together Greek yogurt, light mayonnaise, Dijon mustard, lemon juice, honey, garlic powder, salt, and black pepper until smooth. Add diced chicken, celery, red onion, parsley, and dill if using.
  2. Gently fold everything together until well combined and coated with the dressing. Taste and adjust seasoning if needed.
