Linguine Pasta:
- 12 ounces linguine pasta
Clam Sauce:
- 2 tablespoons olive oil
- 4 cloves garlic (minced)
- 1/4 teaspoon red pepper flakes (optional)
- 1 (10-ounce) can whole baby clams (drained and juice reserved)
- 1 (6.5-ounce) can minced clams (undrained)
- 1/2 cup dry white wine
- 1 tablespoon lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup chopped fresh parsley
- 2 tablespoons unsalted butter
- Grated Parmesan cheese (for serving)
Instructions
- Cook Linguine: Cook linguine according to package directions until al dente. Drain and set aside.
- Prepare Clam Sauce: In a large skillet, heat olive oil over medium heat. Add garlic and red pepper flakes, sauté for 1 minute. Pour in reserved clam juice, white wine, and lemon juice. Simmer for 4–5 minutes. Add both cans of clams, salt, and pepper. Simmer for 2 minutes, then stir in butter and parsley.
- Combine and Serve: Add cooked linguine to the skillet, toss to coat with sauce. Cook for 1–2 more minutes. Serve hot with Parmesan cheese.
Notes
- For a thicker sauce, simmer longer before adding clams.
- You can substitute bottled clam juice if needed.
- Use fresh clams if desired—steam and remove from shells before adding.
