  • 1/2 cup finely ground blanched almonds or almond flour
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon almond extract (optional)
  • Filling and Decoration:

  • 1/2 cup seedless raspberry jam
  • Powdered sugar for dusting

Instructions

  1. Dough Preparation: In a medium bowl, whisk together flour, baking powder, salt, and cinnamon. In a large bowl, cream butter and sugar until fluffy. Add almonds, egg, vanilla extract, and almond extract. Mix in dry ingredients until just combined. Divide dough, wrap, and chill.
  2. Baking: Preheat oven to 350°F (175°C). Roll out dough, cut into shapes, and bake for 8-10 minutes. Cool on a wire rack.
  3. Assembly: Spread jam on solid cookies, dust cut-out cookies with powdered sugar, and sandwich together.
