- 2 tablespoons milk (dairy or non-dairy)

Instructions
- Preheat the Oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Mix Dry Ingredients: In a medium bowl, whisk together almond flour, einkorn flour, sugar, salt, and baking powder.
- Combine Wet Ingredients: In a separate bowl, beat together the softened butter, egg, vanilla, almond extract, and milk until smooth.
- Form Cookie Dough: Add the wet ingredients to the dry ingredients and stir until a soft dough forms. Scoop out heaping teaspoons of dough and roll into balls.
- Bake: Place the dough balls on the prepared baking sheet, flatten gently, and top with sliced almonds if desired. Bake for 10–12 minutes until lightly golden.
