Description

These Little Almond and Einkorn Cookies are a delightful treat with a nutty flavor and a hint of sweetness. Made with almond flour and einkorn flour, these cookies are perfect for those looking for a lower gluten option. Easy to make and perfect for snacking or dessert!

Ingredients

Scale

Almond and Einkorn Cookies:

  • 1 cup finely ground almond flour
  • 3/4 cup einkorn flour
  • 1/3 cup coconut sugar or cane sugar
  • 1/4 teaspoon fine sea salt
  • 1/2 teaspoon baking powder
  • 1/4 cup unsalted butter (softened)
  • 1 egg
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon almond extract
  • 2 tablespoons milk (dairy or non-dairy)
  • sliced almonds for topping (optional)

Instructions

  1. Preheat the Oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mix Dry Ingredients: In a medium bowl, whisk together almond flour, einkorn flour, sugar, salt, and baking powder.
  3. Combine Wet Ingredients: In a separate bowl, beat together the softened butter, egg, vanilla, almond extract, and milk until smooth.
  4. Form Cookie Dough: Add the wet ingredients to the dry ingredients and stir until a soft dough forms. Scoop out heaping teaspoons of dough and roll into balls.
  5. Bake: Place the dough balls on the prepared baking sheet, flatten gently, and top with sliced almonds if desired. Bake for 10–12 minutes until lightly golden.
  6. Cool and Serve: Cool the cookies on a wire rack before serving.

Notes

  • These cookies are naturally lower in gluten due to the einkorn flour and are rich in nutty flavor.
  • Store in an airtight container at room temperature for up to 5 days.
  • You can substitute einkorn with whole wheat pastry flour if needed.
