Ingredients

Scale

Potatoes

  • 4 large russet potatoes, scrubbed clean and patted dry
  • 4 tablespoons olive oil
  • 1.5 tablespoons sea salt

Steak Bites

  • 2 lbs steak (NY strip, ribeye, sirloin, or tenderloin)
  • 2 teaspoons kosher salt
  • 2 tablespoons garlic, minced (about 810 cloves)
  • 6 tablespoons butter, softened (divided)
  • 2 tablespoons cajun seasoning (adjust salt if needed)
  • 4 tablespoons avocado oil, divided

Parmesan Cream Sauce

  • 1 1/2 cups heavy cream
  • 2/3 cup parmesan, grated
  • 2 tablespoons fresh parsley, minced
  • 2 wedges lemon, juice of
  • 1/21 teaspoon red pepper flakes
  • 1 teaspoon freshly cracked pepper

Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C) and line a baking pan with parchment paper to prepare for baking the potatoes.
  2. Bake Potatoes: Rub the potatoes thoroughly with olive oil and sprinkle with sea salt. Place them on the prepared pan and bake for 50-60 minutes, or until they become tender when pierced with a fork.
  3. Prepare Steak: Trim excess fat from the steak and cut it into 2-inch pieces. Toss the steak bites with avocado oil and cajun seasoning, ensuring even coating for optimal flavor.
  4. Cook Steak Bites: Heat a skillet over medium-high heat. Add half of the avocado oil and sear the steak bites for about 2 minutes per side to develop a nice crust. Then reduce the heat and cook for an additional minute to finish cooking through.
  5. Sauté Garlic and Butter with Steak: Add butter and minced garlic to the skillet with the steak bites. Sauté until the garlic is fragrant and tender, then toss to coat the steak bites evenly.
  6. Make Parmesan Cream Sauce: In another pan, sauté the remaining butter and garlic until fragrant. Whisk in the heavy cream and let it simmer gently for 3-5 minutes until slightly thickened. Stir in the grated parmesan, fresh parsley, lemon juice, red pepper flakes, and freshly cracked pepper to complete the sauce.
  7. Assemble Loaded Potatoes: Once the potatoes are baked and cool enough to handle, fluff the insides with a fork. Top each baked potato generously with the garlic butter steak bites and drizzle with the creamy parmesan sauce before serving.

Notes

  • Adjust the amount of cayenne or red pepper flakes if you prefer less heat in the sauce.
  • For a crispier potato skin, prick the potatoes with a fork before baking and bake directly on the oven rack instead of a pan.
  • Use a cast iron skillet for the best sear on the steak bites.
  • Let the steak rest for a few minutes before cutting to retain juices, if preferred.
  • Parmesan can be substituted with Pecorino Romano for a sharper flavor.
