Instructions
- Prepare the fries: Wash and scrub the potatoes thoroughly, then pat them dry with a paper towel. Peel the potatoes and slice them into thick fries about 3/4 inch by 3 inches each.
- Season the boiling water: Bring 1 quart of water to a simmer in a pot and add 3 tablespoons of salt to season.
- Steam the potatoes: Place the cut potatoes in a basket or colander and set it over the simmering water. Cover and steam them for about 10-12 minutes or until a knife inserted goes through easily, being careful not to overcook so they don’t become mushy.
- Coat with oil: Transfer the steamed potatoes carefully to a bowl and drizzle with the extra virgin olive oil. Toss gently to ensure every fry is coated evenly.
- Arrange for baking: Using a slotted spoon, transfer the potatoes to a nonstick baking sheet in a single even layer to ensure crispiness.
- Bake the fries: Place the fries in a preheated 450°F oven. Bake for about 10 minutes, then rotate the pan for even cooking and bake for an additional 5-10 minutes. Keep a close watch to prevent burning and achieve golden crispness.
