- 2 tablespoons olive oil
- 1 medium onion, chopped
- 2 garlic cloves, minced
- 3 medium potatoes, peeled and diced
- 4 cups vegetable broth
- 1 cup chopped fresh lovage leaves (loosely packed)
- 1/2 cup heavy cream or coconut cream (optional)
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat. Add chopped onion and sauté until translucent, about 5 minutes.
- Stir in garlic and cook for 1 minute.
- Add potatoes and vegetable broth, bring to a boil. Reduce heat and simmer for 15–20 minutes until potatoes are tender.
- Stir in chopped lovage and simmer for an additional 5 minutes.
- Use an immersion blender to purée the soup until smooth, or transfer to a blender in batches.
- Stir in cream if using, then season with salt and pepper.
- Serve hot, garnished with fresh lovage leaves if desired.
