Description

These Lucky Charms Cookies are a whimsical and colorful treat that combines the sweet crunch of Lucky Charms cereal with the decadence of white chocolate chips in a soft, chewy cookie. Perfect for kids and adults alike!

Cookies:

  • 1 cup unsalted butter (softened)
  • 1 cup granulated sugar
  • 1/2 cup brown sugar (packed)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups Lucky Charms cereal (separate marshmallows and cereal pieces)
  • 1/2 cup white chocolate chips (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream butter and sugars: In a large mixing bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add eggs and vanilla: Beat in the eggs one at a time, then add the vanilla extract.
  4. Combine dry ingredients: In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Combine wet and dry mixtures: Gradually add the dry ingredients to the wet mixture and mix until just combined.
  6. Add cereal and chocolate: Gently fold in the cereal pieces and white chocolate chips if using. Reserve the marshmallows to press on top of each cookie before baking.
  7. Bake: Scoop dough into tablespoon-sized balls and place on the prepared baking sheet. Gently press Lucky Charms marshmallows into the tops of each dough ball. Bake for 10–12 minutes, until lightly golden. Cool on the pan before transferring to a wire rack.

Notes

  • For extra soft cookies, slightly underbake and allow them to finish cooking on the baking sheet.
