Macaroni and Cheese Bites:

  • 2 cups cooked elbow macaroni (about 1 cup dry)
  • 1 tablespoon butter
  • 1 tablespoon all-purpose flour
  • 1/2 cup whole milk
  • 1 cup shredded sharp cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 large egg
  • 1/4 cup breadcrumbs (plus more for topping)
  • nonstick spray or butter for greasing

Instructions

  1. Preheat oven: Preheat oven to 375°F (190°C). Grease a mini muffin tin with butter or nonstick spray.
  2. Make cheese sauce: Melt butter in a saucepan, whisk in flour, then gradually add milk, whisking until smooth. Stir in cheeses, garlic powder, salt, and pepper until smooth.
  3. Combine ingredients: Mix cooked macaroni with cheese sauce, then add egg and breadcrumbs. Spoon mixture into muffin tin.
  4. Bake: Sprinkle breadcrumbs on top of each bite. Bake for 15–18 minutes until golden and set. Let cool slightly before serving.
