Macaroni and Cheese Bites:
- 2 cups cooked elbow macaroni (about 1 cup dry)
- 1 tablespoon butter
- 1 tablespoon all-purpose flour
- 1/2 cup whole milk
- 1 cup shredded sharp cheddar cheese
- 1/4 cup grated Parmesan cheese
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 large egg
- 1/4 cup breadcrumbs (plus more for topping)
- nonstick spray or butter for greasing
Instructions
- Preheat oven: Preheat oven to 375°F (190°C). Grease a mini muffin tin with butter or nonstick spray.
- Make cheese sauce: Melt butter in a saucepan, whisk in flour, then gradually add milk, whisking until smooth. Stir in cheeses, garlic powder, salt, and pepper until smooth.
- Combine ingredients: Mix cooked macaroni with cheese sauce, then add egg and breadcrumbs. Spoon mixture into muffin tin.
- Bake: Sprinkle breadcrumbs on top of each bite. Bake for 15–18 minutes until golden and set. Let cool slightly before serving.

- Add crumbled bacon or diced jalapeños for extra flavor.
