Description

Lentil Salad:

  • 1 cup dried green or brown lentils, rinsed
  • 2 cups water or vegetable broth

Salad Mix:

  • 1 ripe mango, peeled and diced
  • 1/2 red bell pepper, diced
  • 1/4 cup red onion, finely diced
  • 1/4 cup fresh cilantro, chopped

Dressing:

  • 2 tablespoons olive oil
  • juice of 1 lime
  • 1 tablespoon honey or maple syrup
  • salt and black pepper to taste
  • 1/4 teaspoon ground cumin (optional)
  • 1/4 cup crumbled feta cheese (optional)

Instructions

  1. Cook Lentils: In a medium saucepan, combine lentils and water or broth. Bring to a boil, then simmer for 20-25 minutes. Drain and cool.
  2. Assemble Salad: In a large bowl, mix lentils, mango, bell pepper, onion, and cilantro.
  3. Prepare Dressing: Whisk olive oil, lime juice, honey, salt, pepper, and cumin. Pour over salad and toss.
  4. Finish: Adjust seasoning, add feta if desired. Serve chilled or at room temperature.
