Mango Pico de Gallo:

  • 2 ripe mangoes, peeled and diced
  • 2 medium Roma tomatoes, seeded and diced
  • 1/2 small red onion, finely chopped
  • 1 jalapeño pepper, seeded and finely chopped
  • 1/4 cup fresh cilantro, chopped
  • juice of 1 lime
  • salt to taste

Instructions

  1. In a medium bowl, combine the diced mangoes, tomatoes, red onion, and jalapeño.
  2. Add the chopped cilantro and squeeze in the lime juice.
  3. Gently toss everything together until well mixed.
  4. Season with salt to taste.

Notes
