Mango Pico de Gallo:
- 2 ripe mangoes, peeled and diced
- 2 medium Roma tomatoes, seeded and diced
- 1/2 small red onion, finely chopped
- 1 jalapeño pepper, seeded and finely chopped
- 1/4 cup fresh cilantro, chopped
- juice of 1 lime
- salt to taste
Instructions
- In a medium bowl, combine the diced mangoes, tomatoes, red onion, and jalapeño.
- Add the chopped cilantro and squeeze in the lime juice.
- Gently toss everything together until well mixed.
- Season with salt to taste.
