Salmon:
- 4 salmon fillets (about 6 oz each)

Mango Salsa:
- 2 ripe mangos (peeled, pitted, and diced)
- 1/2 red bell pepper (diced)
- 1/4 red onion (finely chopped)
- 1 jalapeño (seeded and minced)
- 1/4 cup chopped fresh cilantro
- Juice of 1 lime
Instructions
- Preheat the oven: Preheat the oven to 400°F. Line a baking sheet with parchment paper or lightly grease it.
- Prepare the salmon: Place the salmon fillets on the prepared sheet, skin-side down. Drizzle each fillet with olive oil and season with salt and pepper. Bake for 12-15 minutes, or until the salmon flakes easily with a fork.
