Salmon:

  • 4 salmon fillets (about 6 oz each)
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Mango Salsa:

  • 2 ripe mangos (peeled, pitted, and diced)
  • 1/2 red bell pepper (diced)
  • 1/4 red onion (finely chopped)
  • 1 jalapeño (seeded and minced)
  • 1/4 cup chopped fresh cilantro
  • Juice of 1 lime

Instructions

  1. Preheat the oven: Preheat the oven to 400°F. Line a baking sheet with parchment paper or lightly grease it.
