  • ½ cup pure maple syrup

  • 1 teaspoon vanilla extract

Dry Ingredients:

  • 1½ cups whole wheat flour (or gluten-free all-purpose blend)
  • 1 teaspoon baking soda
  • ½ teaspoon ground cinnamon
  • ½ teaspoon salt
  • optional: ½ cup chopped walnuts or chocolate chips

Instructions

  1. Preheat the oven: Preheat the oven to 325°F and line a muffin tin with paper liners or lightly grease.
  2. Mix wet ingredients: In a large bowl, whisk together the mashed bananas, maple syrup, melted coconut oil, eggs, milk, and vanilla extract until smooth.
  3. Combine dry ingredients: In a separate bowl, mix the flour, baking soda, cinnamon, and salt. Add the dry ingredients to the wet ingredients and stir until just combined.
  4. Add mix-ins: Fold in walnuts or chocolate chips if using.
  5. Bake: Divide the batter evenly among the muffin cups, filling each about ¾ full. Bake for 22–25 minutes, or until a toothpick inserted into the center comes out clean.
