Chicken:

  • 4 boneless, skinless chicken breasts
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil

Sauce:

  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon crushed red pepper flakes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 cup sun-dried tomatoes (drained and chopped)
  • fresh basil for garnish

Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C).
  2. Sear the chicken: Season the chicken breasts with salt and pepper. Sear in a skillet until golden brown, then set aside.
  3. Make the sauce: Sauté garlic, add chicken broth, cream, Parmesan, spices, and sun-dried tomatoes. Simmer until thickened.
  4. Bake: Return chicken to the skillet, spoon sauce over the top. Bake for 15-20 minutes until cooked through.
  5. Serve: Garnish with fresh basil and serve hot.
