  • 1 (15-ounce) can chickpeas, drained and rinsed
  • 1 cup uncooked orzo
  • 2 cups vegetable broth

Additional Ingredients:

  • 1/2 cup sun-dried tomatoes, chopped
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup heavy cream
  • 2 cups fresh baby spinach
  • Salt and black pepper to taste
  • Chopped fresh basil or parsley for garnish

Instructions

  1. Heat olive oil: In a large skillet over medium heat, heat olive oil. Add diced onion and cook until soft, about 4 minutes.
  2. Saute aromatics: Stir in garlic, red pepper flakes, oregano, and smoked paprika, cooking for 30 seconds.
  3. Add chickpeas and orzo: Add chickpeas and orzo, coat with spices.
  4. Cook orzo: Pour in vegetable broth, bring to a boil, then simmer for about 10 minutes until orzo is tender.
  5. Finish dish: Stir in sun-dried tomatoes, Parmesan, and heavy cream until creamy. Add spinach, cook until wilted. Season with salt and pepper. Garnish and serve.
