Description

Delight in these buttery and delicate Marvelous Madeleines that are a classic French treat. These petite sponge cakes have a hint of lemon zest and are perfect with a cup of tea or coffee.

  • 3 large eggs, at room temperature

  • 1/2 cup unsalted butter, melted and cooled
  • zest of 1 lemon (optional)
  • powdered sugar for dusting (optional)

Instructions

  1. Preheat and Prepare: Preheat the oven to 375°F. Butter a madeleine pan and dust with flour.
  2. Mix Eggs and Sugar: Beat eggs and sugar until pale and doubled in volume.
  3. Add Flavorings: Mix in vanilla extract and lemon zest.
  4. Combine Dry Ingredients: Whisk flour, baking powder, and salt together.
  5. Fold Dry Ingredients: Gently fold dry ingredients into the egg mixture.
  6. Add Butter: Slowly fold in melted butter.
  7. Chill Batter: Refrigerate batter for at least 1 hour.
  8. Bake: Spoon batter into pan and bake for 10–12 minutes.
  9. Cool and Serve: Cool in the pan before transferring to a wire rack. Dust with powdered sugar if desired.
