Instructions
- Preheat and Prepare: Preheat the oven to 375°F. Butter a madeleine pan and dust with flour.
- Mix Eggs and Sugar: Beat eggs and sugar until pale and doubled in volume.
- Add Flavorings: Mix in vanilla extract and lemon zest.
- Combine Dry Ingredients: Whisk flour, baking powder, and salt together.
- Fold Dry Ingredients: Gently fold dry ingredients into the egg mixture.
- Add Butter: Slowly fold in melted butter.
- Chill Batter: Refrigerate batter for at least 1 hour.
- Bake: Spoon batter into pan and bake for 10–12 minutes.
- Cool and Serve: Cool in the pan before transferring to a wire rack. Dust with powdered sugar if desired.

- Chilling the batter helps create the signature hump.
