  • 2 cups cold mashed potatoes
  • 1 large egg
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped green onions
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon butter (melted)

Instructions

  1. Preheat the Oven: Preheat the oven to 400°F (200°C) and lightly grease a mini muffin pan with cooking spray or melted butter.
  2. Mix Ingredients: In a large bowl, combine mashed potatoes, egg, cheddar cheese, Parmesan cheese, green onions, flour, garlic powder, salt, and pepper.
  3. Fill Muffin Cups: Spoon the mixture into the mini muffin cups, filling each about 3/4 full. Brush the tops with melted butter.
  4. Bake: Bake for 20–25 minutes until golden brown and slightly crisp.
  5. Serve: Allow to cool slightly before removing from the pan. Serve warm.
