Description

These Mashed Potato Cheese Puffs are a delightful way to use up leftover mashed potatoes. Crispy on the outside and fluffy on the inside, they’re perfect as appetizers or side dishes.

  • 2 cups cold mashed potatoes
  • 1 large egg
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped green onions or chives
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt

For Coating:

  • 1/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • cooking spray or oil for greasing

Instructions

  1. Preheat the oven: Preheat the oven to 400°F (200°C) and grease a mini muffin tin.
  2. Mix ingredients: In a large bowl, combine mashed potatoes, egg, cheeses, green onions, garlic powder, salt, and pepper. Mix well.
  3. Add flour mixture: In a separate bowl, whisk flour and baking powder, then fold into the potato mixture.
  4. Fill muffin tin: Spoon the mixture into the greased tin, filling each cup almost to the top.
  5. Bake: Bake for 20–25 minutes until puffed and golden.
  6. Cool and serve: Let cool for 5 minutes before removing from the tin. Serve warm.
