Pancake Bites:

  • 1 cup pancake mix
  • 1/2 cup milk
  • 1 large egg
  • 1 tablespoon maple syrup
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Filling:

  • 1/2 cup cooked breakfast sausage, crumbled
  • 1/2 cup cooked and chopped bacon
  • 1/2 cup shredded cheddar cheese

Additional:

  • Additional maple syrup for dipping

Instructions

  1. Preheat and Prepare: Preheat oven to 375°F and lightly grease a mini muffin tin.
  2. Mix Batter: In a mixing bowl, whisk together pancake mix, milk, egg, and maple syrup until smooth. Fold in the cooked sausage, bacon, cheddar cheese, salt, and pepper.
  3. Bake: Spoon the batter into the mini muffin tin, filling each cup about 3/4 full. Bake for 12–15 minutes until golden brown and a toothpick comes out clean.
  4. Serve: Let cool slightly before removing from the pan. Serve warm with maple syrup for dipping.
