Description

A flavorful Mediterranean baked fish recipe featuring tender white fish filets topped with a vibrant mix of cherry tomatoes, kalamata olives, capers, and fresh herbs. This healthy and easy dish combines classic Mediterranean spices like oregano, cumin, and smoked paprika with zesty lemon and garlic to create a deliciously aromatic meal perfect for weeknight dinners.

Ingredients

Scale

Fish and Marinade

  • 4 filets of white fish (such as cod, halibut, or sea bass)
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 lemon (zested and juiced)
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • Salt and freshly ground black pepper (to taste)

Topping

  • 1 cup cherry tomatoes, halved
  • ½ cup kalamata olives, pitted and halved
  • ¼ cup red onion, finely chopped
  • 2 tbsp capers, rinsed and drained
  • 2 tbsp fresh parsley, chopped
  • 2 tbsp fresh dill, chopped (optional)

Dressing

  • 1 tbsp olive oil
  • 1 tsp red wine vinegar

Instructions

  1. Preheat the oven: Preheat your oven to 400°F (200°C) to prepare for baking the fish perfectly.
  2. Prepare the marinade: In a small bowl, combine the olive oil, minced garlic, lemon zest and juice, dried oregano, ground cumin, smoked paprika, salt, and black pepper. Mix well to create a fragrant marinade.
  3. Marinate the fish filets: Place the white fish filets in a shallow dish and pour the marinade over them. Ensure each filet is well coated. Let them marinate for about 10 minutes to absorb the flavors.
  4. Assemble the topping: In a separate bowl, combine halved cherry tomatoes, kalamata olives, finely chopped red onion, rinsed capers, fresh parsley, and optional fresh dill. Toss gently to mix the ingredients evenly.
  5. Prepare the dressing: Mix the olive oil and red wine vinegar in a small bowl and drizzle over the topping mixture, tossing once more to coat.
  6. Arrange fish and topping: Place the marinated fish filets on a baking dish and evenly spread the tomato and olive topping over each filet.
  7. Bake the fish: Bake in the preheated oven for 15-20 minutes, or until the fish flakes easily with a fork and is cooked through.
  8. Serve: Remove from the oven and let rest for a couple of minutes, then serve warm garnished with extra fresh herbs if desired.

Notes

  • Choose firm white fish like cod or halibut for the best texture.
  • If you prefer a spicier dish, add a pinch of crushed red pepper flakes to the marinade.
  • The fresh dill is optional but adds a lovely aromatic touch.
  • Serve with a side of crusty bread or a fresh green salad for a complete Mediterranean meal.
  • Leftovers can be stored in the refrigerator for up to 2 days.
