Description

Dough:

  • 3 1/4 cups bread flour
  • 1 1/2 teaspoons salt
  • 1 teaspoon instant yeast
  • 1 1/2 cups warm water

Add-Ins:

  • 1/2 cup pitted Kalamata olives, chopped
  • 4 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped (optional)
  • 1 tablespoon olive oil for coating

Instructions

  1. Mix the Dough: In a large mixing bowl, combine bread flour, salt, and instant yeast. Stir in warm water until a shaggy dough forms.
  2. Add Flavors: Add olives, garlic, and rosemary if using. Mix until evenly distributed.
  3. First Rise: Cover the bowl and let the dough rest at room temperature for 12-18 hours until doubled in size and bubbly.
  4. Shape and Second Rise: Turn out the dough, shape into a round loaf, and let it rest for 30-45 minutes.
  5. Preheat and Bake: Preheat oven to 450°F (230°C) with a Dutch oven inside. Bake the bread for 30 minutes covered, then uncover and bake for 10-15 minutes more until golden brown.
  6. Cool and Serve: Cool on a wire rack before slicing.
