Description

Indulge in the flavors of the Mediterranean with this delightful twist on a classic grilled cheese sandwich. Filled with a savory blend of mozzarella, feta, sun-dried tomatoes, and olives, this sandwich is a delicious lunch option that’s easy to make.

Ingredients

Scale

Sourdough or Rustic Bread:

  • 4 slices

Olive Oil:

  • 2 tablespoons

Mozzarella Cheese:

  • 4 ounces, sliced

Feta Cheese:

  • 2 ounces, crumbled

Sun-Dried Tomatoes:

  • 1/4 cup, chopped

Baby Spinach Leaves:

  • 1/4 cup

Kalamata Olives:

  • 2 tablespoons, pitted and sliced

Dried Oregano:

  • 1 teaspoon

Black Pepper:

  • 1/4 teaspoon

Instructions

  1. Prepare the Bread: Brush one side of each bread slice lightly with olive oil.
  2. Layer the Ingredients: Place two slices of bread, oiled side down, on a clean surface. Layer evenly with mozzarella, feta, sun-dried tomatoes, spinach, and olives. Sprinkle with oregano and black pepper.
  3. Assemble and Cook: Top with the remaining bread slices, oiled side up. Heat a skillet or griddle over medium heat. Cook the sandwiches for 3–4 minutes per side, pressing gently with a spatula, until the bread is golden brown and the cheese is melted.
  4. Serve: Remove from the skillet, cut in half, and serve warm.

Notes

  • You can substitute arugula or fresh basil for the spinach for a peppery or herbal twist.
  • A drizzle of balsamic glaze before serving adds extra Mediterranean flavor.
  • For a crispier sandwich, use a panini press.
