Pasta:

  • 12 oz rotini or penne pasta

Veggies:

  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup Kalamata olives, sliced
  • 1/2 cup roasted red peppers, chopped
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped

Additional:

  • 1/2 cup crumbled feta cheese
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook the Pasta: Boil the pasta until al dente, then rinse under cold water.
  2. Prepare the Salad: Combine pasta, tomatoes, cucumber, olives, red peppers, feta, red onion, and parsley in a bowl.
  3. Make the Dressing: Whisk together olive oil, vinegar, lemon juice, mustard, garlic, oregano, salt, and pepper.
