Pasta:
- 12 oz rotini or penne pasta
Veggies:
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup Kalamata olives, sliced
- 1/2 cup roasted red peppers, chopped
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
Additional:
- 1/2 cup crumbled feta cheese
- 1/4 cup extra virgin olive oil
- 2 tablespoons red wine vinegar
- 1 tablespoon fresh lemon juice
- 1 teaspoon Dijon mustard
- 1 clove garlic, minced
- 1/2 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Cook the Pasta: Boil the pasta until al dente, then rinse under cold water.
- Prepare the Salad: Combine pasta, tomatoes, cucumber, olives, red peppers, feta, red onion, and parsley in a bowl.
- Make the Dressing: Whisk together olive oil, vinegar, lemon juice, mustard, garlic, oregano, salt, and pepper.
