- 1 tablespoon olive oil
- 1 small yellow onion, diced
- 2 cloves garlic, minced
- 1 head cauliflower, cut into small florets
- 1 medium carrot, sliced
- 1 celery stalk, sliced
- 1 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon turmeric
- 1/4 teaspoon red pepper flakes (optional)
- 4 cups vegetable broth
- 1 can (15 ounces) chickpeas, drained and rinsed
- juice of 1/2 lemon
- salt and pepper to taste
- chopped fresh parsley for garnish (optional)
Instructions
- In a large soup pot, heat olive oil over medium heat. Add the diced onion and sauté for 3–4 minutes until softened.
- Stir in the garlic, carrot, and celery and cook for another 3 minutes.
- Add the cauliflower florets and all the spices—cumin, coriander, smoked paprika, turmeric, and red pepper flakes. Stir to coat the vegetables in the spices and cook for 2 minutes.
- Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 20–25 minutes, or until the cauliflower is very tender.
- Add the chickpeas and cook for another 5 minutes.
- Using an immersion blender, partially blend the soup to create a creamy yet chunky texture, or blend fully for a smoother soup if preferred.
- Stir in the lemon juice, season with salt and pepper to taste, and serve hot, garnished with fresh parsley if desired.
Notes
- For a richer texture, stir in a splash of coconut milk or plain Greek yogurt before serving.
- This soup pairs well with warm pita bread or a drizzle of olive oil and a sprinkle of za’atar on top.
