Ingredients:

  • 1 tablespoon olive oil
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 1 head cauliflower, cut into small florets
  • 1 medium carrot, sliced
  • 1 celery stalk, sliced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon turmeric
  • 1/4 teaspoon red pepper flakes (optional)
  • 4 cups vegetable broth
  • 1 can (15 ounces) chickpeas, drained and rinsed
  • juice of 1/2 lemon
  • salt and pepper to taste
  • chopped fresh parsley for garnish (optional)

Instructions

  1. In a large soup pot, heat olive oil over medium heat. Add the diced onion and sauté for 3–4 minutes until softened.
  2. Stir in the garlic, carrot, and celery and cook for another 3 minutes.
  3. Add the cauliflower florets and all the spices—cumin, coriander, smoked paprika, turmeric, and red pepper flakes. Stir to coat the vegetables in the spices and cook for 2 minutes.
  4. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 20–25 minutes, or until the cauliflower is very tender.
  5. Add the chickpeas and cook for another 5 minutes.
  6. Using an immersion blender, partially blend the soup to create a creamy yet chunky texture, or blend fully for a smoother soup if preferred.
  7. Stir in the lemon juice, season with salt and pepper to taste, and serve hot, garnished with fresh parsley if desired.

Notes

  • For a richer texture, stir in a splash of coconut milk or plain Greek yogurt before serving.
  • This soup pairs well with warm pita bread or a drizzle of olive oil and a sprinkle of za’atar on top.
