Marinade:
- 2 pounds boneless, skinless chicken thighs (or bone-in for more flavor)

- 1 tablespoon achiote paste (or 1 teaspoon ground annatto)

- 1 teaspoon dried oregano
- ½ teaspoon smoked paprika
- ½ teaspoon chili powder

Instructions
- Prepare the Marinade: In a medium bowl, whisk together orange juice, lime juice, olive oil, garlic, vinegar, achiote paste, cumin, oregano, smoked paprika, chili powder, salt, and black pepper until well combined.
- Marinate the Chicken: Place the chicken in a large zip-top bag or shallow dish and pour the marinade over it. Toss to coat the chicken evenly. Cover and refrigerate for at least 2 hours or overnight for best flavor.
- Grill the Chicken: Preheat a grill or grill pan to medium-high heat. Remove chicken from marinade and grill for 5–7 minutes per side, or until internal temperature reaches 165°F (74°C) and the outside is nicely charred.
- Rest and Serve: Let the chicken rest for 5 minutes before slicing. Garnish with chopped cilantro if desired and serve with rice, tortillas, or grilled vegetables.
