Cream Cheese Filling:
- 1 package (8 ounces) cream cheese, softened
- 1/2 cup sour cream
- 1 cup shredded cheddar cheese
- 1/2 cup shredded pepper jack cheese
- 1 can (4 ounces) diced green chiles, drained
- 1/2 cup finely chopped red bell pepper
- 1/2 cup finely chopped green onions
- 1/4 cup chopped fresh cilantro
- 1 teaspoon garlic powder
- 1 teaspoon chili powder
- Salt and pepper to taste
Additional Ingredients:
- 5 large flour tortillas (10-inch)
- Salsa for serving (optional)
Instructions
- Prepare the Cream Cheese Filling: In a large mixing bowl, beat the softened cream cheese and sour cream together until smooth. Stir in the shredded cheddar, pepper jack, diced green chiles, chopped bell pepper, green onions, cilantro, garlic powder, chili powder, salt, and pepper until fully combined.
- Assemble the Pinwheels: Lay out a tortilla on a clean surface and spread an even layer of the filling mixture over the entire tortilla. Tightly roll up the tortilla, then wrap it in plastic wrap. Repeat with the remaining tortillas and filling.
- Chill and Serve: Refrigerate the wrapped rolls for at least 2 hours to firm up. When ready to serve, remove plastic wrap and slice each roll into 1-inch pinwheels. Arrange on a platter and serve with salsa if desired.
Notes
- These pinwheels can be made a day ahead and kept refrigerated until ready to slice and serve.
- For extra spice, add finely diced jalapeños to the filling.
