  • 1 pound cooked shrimp, peeled and deveined, tails removed
  • 1 cup diced tomatoes
  • 1/2 cup ketchup
  • 1/4 cup fresh lime juice
  • 1/4 cup chopped red onion
  • 1/2 cup chopped cucumber (peeled and seeded)
  • 1/2 cup chopped celery
  • 1 small jalapeño, finely chopped (optional)
  • 1/4 cup chopped fresh cilantro
  • 1/2 teaspoon hot sauce (like Tabasco)
  • Salt and pepper to taste
  • Diced avocado for topping

Instructions

  1. In a large bowl, combine the ketchup, lime juice, hot sauce, and a pinch of salt and pepper. Stir in the tomatoes, onion, cucumber, celery, jalapeño (if using), and cilantro.
  2. Add the shrimp and gently toss to coat in the sauce. Chill the mixture in the refrigerator for at least 30 minutes to let the flavors meld.
