Ingredients

Tater Tots:

1 bag (32 ounces) frozen tater tots

Taco Meat:

1 tablespoon olive oil, 1 pound ground beef or ground turkey, 1 packet taco seasoning (or 3 tablespoons homemade), 1/4 cup water

Toppings:

1 can (15 ounces) black beans (drained and rinsed), 1 cup corn kernels (fresh, canned, or frozen), 2 cups shredded cheddar cheese, 1 cup Monterey Jack cheese, 1/2 cup diced tomatoes, 1/4 cup sliced jalapeños (fresh or pickled), 1/4 cup red onion (diced), 1/4 cup fresh cilantro (chopped), 1/2 cup sour cream, 1/2 cup guacamole, salsa for serving.


Instructions

  1. Preheat the oven: Preheat the oven to 425°F.
  2. Bake Tater Tots: Arrange tater tots on a baking sheet and bake until golden and crispy.
  3. Cook Taco Meat: Brown ground beef, add taco seasoning and water, cook until combined.
  4. Assemble Totchos: Transfer tater tots to a skillet, top with taco meat, beans, corn, and cheeses. Bake until cheese melts.
