Sugar Mixture:

- 1/2 cup light corn syrup

Instructions
- Prepare Baking Sheet: Line a baking sheet with parchment paper or lightly grease it and set aside.
- Microwave Sugar Mixture: In a large microwave-safe glass bowl, stir together the sugar and corn syrup until combined. Microwave on high for 4 minutes.
- Add Peanuts and Cook: Carefully stir in the peanuts and microwave for another 3-4 minutes until light golden. Add butter and vanilla, stir, and microwave for 1 more minute.
- Add Baking Soda: Remove from microwave, quickly stir in baking soda (mixture will foam), then pour onto prepared sheet.
- Cool and Enjoy: Spread out the brittle, let it cool at room temperature for about 30 minutes until hardened. Break into pieces and enjoy!
