Main Ingredients:

  • 1 pound ground beef or lamb (or a mix of both)
  • ½ onion (grated or finely minced)
  • 3 cloves garlic (minced)
  • ¼ cup fresh parsley (finely chopped)
  • 1 tablespoon fresh mint (chopped, optional)
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • ½ teaspoon ground cinnamon
  • ½ teaspoon paprika
  • ¼ teaspoon cayenne pepper (optional)
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions

  1. Prepare Skewers: If using wooden skewers, soak them in water for at least 30 minutes.
  2. Mix Ingredients: In a large bowl, combine the ground meat, onion, garlic, parsley, mint (if using), cumin, coriander, cinnamon, paprika, cayenne, salt, and pepper. Mix well with your hands.
  3. Shape Kebabs: Divide the mixture into 6–8 portions and shape each around a skewer into a long, oval kebab shape, pressing firmly to secure.
  4. Chill: Place on a tray and chill for 15–30 minutes.
  5. Grill: Preheat a grill and cook the kofta kebabs for 8–10 minutes, turning occasionally, until cooked through and charred.
  6. Serve: Enjoy hot with pita, hummus, tzatziki, or a fresh salad.

Notes

  • For extra moisture, add a tablespoon of olive oil to the meat mixture.
  • You can also bake the kebabs in a 400°F (200°C) oven for 15–20 minutes if grilling isn’t an option.
