Ingredients

Chicken Marinade:

1 1/2 pounds boneless, skinless chicken breasts or thighs, cut into 1 1/2-inch pieces,
1/4 cup plain Greek yogurt,
3 tablespoons olive oil,
2 tablespoons fresh lemon juice,
2 tablespoons red wine vinegar,
3 cloves garlic, minced,
2 teaspoons ground cumin,
2 teaspoons smoked paprika,
1 teaspoon ground coriander,
1 teaspoon ground turmeric,
1/2 teaspoon cayenne pepper (optional),
1 teaspoon salt,
1/2 teaspoon black pepper,

Skewers:

1 red onion, cut into chunks,
1 red bell pepper, cut into chunks,
1 yellow bell pepper, cut into chunks,
fresh parsley and lemon wedges for garnish


Instructions

  1. Prepare the Chicken Marinade: In a large bowl, whisk together the Greek yogurt, olive oil, lemon juice, red wine vinegar, garlic, cumin, smoked paprika, coriander, turmeric, cayenne (if using), salt, and black pepper.
