- 1 teaspoon lemon juice

Instructions
- Prepare Oven and Muffin Tin: Preheat the oven to 375°F (190°C) and lightly grease a muffin tin with non-stick spray or butter to prevent sticking.
- Cut Pie Crust Circles: Roll out the pie crusts on a lightly floured surface and use a round cutter or glass to cut circles large enough to fit into the muffin cups.
- Line Muffin Cups: Press each crust circle into the bottom and sides of the greased muffin cups to form a shell.
- Make the Apple Filling: In a medium bowl, combine the diced apples with the granulated sugar, brown sugar, cinnamon, flour, and lemon juice. Stir until the apples are evenly coated.
- Fill Pie Crusts: Spoon the apple mixture evenly into each crust-lined muffin cup.
- Add Butter Pieces: Top the apple filling in each cup with a few small pieces of butter for richness.
- Create Pie Tops: Cut additional pie crust into circles or strips to make lattice tops or simple covers and place them over the filled pies, sealing the edges gently.
- Apply Egg Wash and Sugar: Brush the tops of the pies with the beaten egg to promote browning and sprinkle coarse sugar on top if desired for extra crunch and sweetness.
- Bake the Mini Pies: Place the muffin tin in the oven and bake for 20 to 25 minutes or until the crust is golden brown and the filling is bubbly.
