Description

These Mini Apple Pies are perfect bite-sized desserts featuring tender, cinnamon-spiced apples wrapped in flaky pie crust. Easy to make and ideal for fall gatherings or anytime you want a delightful handheld treat.

Ingredients

Scale

Pie Crust

  • 2 refrigerated pie crusts

Apple Filling

  • 2 medium Granny Smith apples, peeled, cored, and finely diced
  • 2 tablespoons granulated sugar
  • 2 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • 1 tablespoon all-purpose flour
  • 1 teaspoon lemon juice

Topping & Finishing

  • 1 tablespoon butter, cut into small pieces
  • 1 egg, beaten (for egg wash)
  • Coarse sugar (optional, for topping)
  • Non-stick cooking spray or butter, for greasing muffin tin

Instructions

  1. Prepare Oven and Muffin Tin: Preheat the oven to 375°F (190°C) and lightly grease a muffin tin with non-stick spray or butter to prevent sticking.
  2. Cut Pie Crust Circles: Roll out the pie crusts on a lightly floured surface and use a round cutter or glass to cut circles large enough to fit into the muffin cups.
  3. Line Muffin Cups: Press each crust circle into the bottom and sides of the greased muffin cups to form a shell.
  4. Make the Apple Filling: In a medium bowl, combine the diced apples with the granulated sugar, brown sugar, cinnamon, flour, and lemon juice. Stir until the apples are evenly coated.
  5. Fill Pie Crusts: Spoon the apple mixture evenly into each crust-lined muffin cup.
  6. Add Butter Pieces: Top the apple filling in each cup with a few small pieces of butter for richness.
  7. Create Pie Tops: Cut additional pie crust into circles or strips to make lattice tops or simple covers and place them over the filled pies, sealing the edges gently.
  8. Apply Egg Wash and Sugar: Brush the tops of the pies with the beaten egg to promote browning and sprinkle coarse sugar on top if desired for extra crunch and sweetness.
  9. Bake the Mini Pies: Place the muffin tin in the oven and bake for 20 to 25 minutes or until the crust is golden brown and the filling is bubbly.
  10. Cool and Serve: Allow the pies to cool in the pan for 10 minutes before carefully removing them. Serve warm or at room temperature for best flavor.

Notes

  • Use any tart apple variety like Honeycrisp or Pink Lady instead of Granny Smith for different flavors.
  • Add a pinch of nutmeg to the apple filling to enhance warmth and spice.
  • Drizzle caramel sauce over the pies before serving for an indulgent touch.
