Brownie Batter:

  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder

Add-ins:

  • 1 cup Cadbury Mini Eggs, roughly chopped
  • Nonstick spray or parchment paper for lining

Instructions

  1. Preheat the oven: Preheat the oven to 350°F. Grease or line an 8×8-inch baking pan with parchment paper.
  2. Mix wet ingredients: In a large mixing bowl, whisk together the melted butter and sugar until smooth. Add the eggs and vanilla extract, and mix until fully incorporated.
  3. Add dry ingredients: Stir in the cocoa powder, flour, salt, and baking powder until just combined—do not overmix.
  4. Combine batter: Gently fold in about 3/4 of the chopped Mini Eggs. Pour the batter into the prepared pan and spread evenly.
  5. Top with Mini Eggs: Sprinkle the remaining Mini Eggs over the top and press them lightly into the batter.
  6. Bake: Bake for 22–26 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
  7. Cool and serve: Let the brownies cool completely in the pan before slicing into squares.

Notes

  • For extra fudgy brownies, bake closer to the lower end of the time range.
  • You can also swirl in a couple tablespoons of Nutella or peanut butter before baking for added flavor.
