Instructions
- Preheat and Prepare Pan: Preheat your oven to 375°F (190°C) and lightly grease a muffin tin with olive oil or nonstick spray to prevent sticking.
- Prepare Biscuit Crusts: Separate the biscuit dough into 8 pieces. Flatten each piece slightly, then press each flattened biscuit into the bottom and up the sides of the muffin cups to form small crust bases.
- Add Sauce: Spoon about 1 tablespoon of pizza sauce into each biscuit crust, spreading it evenly but keeping it inside the dough cup.
- Layer Toppings: Sprinkle shredded mozzarella cheese over the sauce, then top with mini pepperoni slices or diced cooked ham. Finish each with a light sprinkle of Italian seasoning for added flavor.
- Bake: Place the muffin tin in the oven and bake for 12–15 minutes, or until the biscuit crusts turn golden brown and the cheese is melted and bubbly.
- Cool and Serve: Let the mini pizzas cool slightly in the pan before removing. Serve warm immediately or allow to cool completely before packing into lunchboxes.
