Description

These Mini Lunchbox Pizzas are a fun and easy way to enjoy homemade pizza in a convenient, snack-sized format. Made with flaky biscuit dough as a crust, they are topped with classic pizza sauce, melty mozzarella, and your choice of pepperoni or ham, then baked to golden perfection in a muffin tin. Perfect for lunchboxes, snacks, or a quick meal, these bite-sized pizzas are customizable, kid-friendly, and simple to prepare.

Ingredients

Scale

Crust

  • 1 can refrigerated biscuit dough (8-count, regular or flaky style)

Toppings

  • ½ cup pizza sauce or marinara
  • ¾ cup shredded mozzarella cheese
  • ¼ cup mini pepperoni slices or diced cooked ham
  • 1 teaspoon Italian seasoning

Additional

  • Olive oil or nonstick spray (for greasing muffin tin)

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 375°F (190°C) and lightly grease a muffin tin with olive oil or nonstick spray to prevent sticking.
  2. Prepare Biscuit Crusts: Separate the biscuit dough into 8 pieces. Flatten each piece slightly, then press each flattened biscuit into the bottom and up the sides of the muffin cups to form small crust bases.
  3. Add Sauce: Spoon about 1 tablespoon of pizza sauce into each biscuit crust, spreading it evenly but keeping it inside the dough cup.
  4. Layer Toppings: Sprinkle shredded mozzarella cheese over the sauce, then top with mini pepperoni slices or diced cooked ham. Finish each with a light sprinkle of Italian seasoning for added flavor.
  5. Bake: Place the muffin tin in the oven and bake for 12–15 minutes, or until the biscuit crusts turn golden brown and the cheese is melted and bubbly.
  6. Cool and Serve: Let the mini pizzas cool slightly in the pan before removing. Serve warm immediately or allow to cool completely before packing into lunchboxes.

Notes

  • Feel free to customize these mini pizzas with your favorite toppings such as olives, bell peppers, mushrooms, or different meats.
  • These pizzas freeze well—prepare in advance and freeze for quick reheating later.
  • Use regular or flaky biscuit dough depending on your texture preference.
  • To make them vegetarian, simply omit meat toppings and add extra veggies.
