Description

These Mini Lunchbox Pizzas are a delightful twist on traditional pizza, perfect for packing in school lunches or enjoying as a snack. With a flaky puff pastry base and classic pizza toppings, they are sure to be a hit with kids and adults alike.

Puff Pastry Pizza Bases:

  • 1 sheet refrigerated puff pastry or pizza dough

Toppings:

  • 1/3 cup pizza sauce
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup mini pepperoni slices or chopped regular pepperoni
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon garlic powder
  • 1 tablespoon olive oil
  • 1 egg (beaten, for egg wash)
  • Optional toppings such as diced bell peppers, olives, or pineapple

Instructions

  1. Preheat the Oven: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Prepare the Dough: Roll out the puff pastry or pizza dough and cut into circles. Place on the baking sheet.
  3. Add Sauce & Toppings: Spread sauce on each round, then add cheese, pepperoni, and any other desired toppings.
  4. Bake: Brush edges with egg wash, sprinkle with oregano and garlic powder, then bake for 12-15 minutes until golden.
  5. Cool & Serve: Let cool slightly before packing into lunchboxes.
