For the Crust:
- 3/4 cup graham cracker crumbs
- 2 tablespoons granulated sugar
- 3 tablespoons unsalted butter (melted)

For the Cheesecake Filling:
- 16 ounces cream cheese (softened)
- 1/2 cup granulated sugar
- 2 tablespoons fresh lime juice
- 1 tablespoon tequila (optional)
- 1 tablespoon orange juice or triple sec
- 1 tablespoon lime zest
- 1 teaspoon vanilla extract
- 2 large eggs
Optional Toppings:
- Whipped cream
- lime wedges or zest
- coarse sugar or salt for garnish
Instructions
- Preheat oven to 325°F. Line a 12-cup muffin tin with paper liners.
- In a small bowl, combine graham cracker crumbs, sugar, melted butter, and salt. Mix until evenly moistened. Press about 1 tablespoon of the mixture firmly into the bottom of each liner.
- In a large mixing bowl, beat cream cheese until smooth. Add sugar, lime juice, tequila (if using), orange juice, lime zest, and vanilla extract. Mix until combined.
- Add eggs one at a time, beating gently after each until just incorporated.
- Divide the filling evenly among the prepared cups, filling each almost to the top.
- Bake for 18–22 minutes, or until centers are set with a slight jiggle. Cool in the pan for 10 minutes, then transfer to a wire rack. Chill in the refrigerator for at least 2 hours before serving.
- Top with whipped cream, lime zest, or a sugared rim garnish if desired.
Notes
- For a non-alcoholic version, omit the tequila and use extra lime juice or orange juice.
- These can be made 1–2 days ahead and stored in the fridge.
