Description

Brownie Layer:

  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder

Mint Layer:

  • 1/4 cup unsalted butter, softened
  • 1 cup powdered sugar
  • 1 tablespoon milk
  • 1/2 teaspoon peppermint extract
  • a few drops green food coloring (optional)

Chocolate Ganache Topping:

  • 3/4 cup semi-sweet chocolate chips
  • 3 tablespoons unsalted butter

Instructions

  1. Preheat oven: Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. Mix brownie batter: Whisk melted butter and sugar, add eggs and vanilla, mix in cocoa, flour, salt, and baking powder. Spread into pan and bake for 20-25 minutes.
  3. Prepare mint layer: Beat butter, add powdered sugar, milk, peppermint extract, and food coloring. Spread over cooled brownies and refrigerate.
  4. Make ganache: Melt chocolate chips and butter, pour over mint layer and refrigerate until set. Cut into squares and serve.

Notes

  • For extra minty flavor, top with chopped Andes mints or crushed mint candies.
