Cookies:

Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) and line 2 baking sheets with parchment paper.
- Cream Butter and Sugars: In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.
- Add Eggs and Extracts: Beat in the eggs one at a time, then add the vanilla and peppermint extracts and mix until smooth.
- Combine Dry Ingredients: In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.
- Mix Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Fold in the chocolate chips.
- Bake: Scoop about 2 tablespoons of dough for each cookie onto the prepared baking sheets. Bake for 10-12 minutes until edges are set but centers are still soft.
- Cool: Allow the cookies to cool on the baking sheets for 5 minutes, then transfer to a wire rack to cool completely.
