Bok Choy:
- 1½ pounds baby bok choy, halved lengthwise
Miso Glaze:
- 1 tablespoon sesame oil
- 2 tablespoons white miso paste
- 1 tablespoon soy sauce
- 1 tablespoon mirin or rice vinegar
- 1 tablespoon maple syrup or honey
- 1 teaspoon grated fresh ginger
- 1 garlic clove, minced
- 2 tablespoons water
Garnish:
- sesame seeds and sliced scallions for garnish (optional)
Instructions
- Miso Glaze: In a small bowl, whisk together the miso paste, soy sauce, mirin, maple syrup, ginger, garlic, and water until smooth.
- Cook Bok Choy: Heat the sesame oil in a large skillet over medium heat. Add the bok choy cut-side down and sear for 2 to 3 minutes until lightly browned. Flip and cook for another 2 minutes.
- Add Glaze: Pour the miso glaze into the pan and toss to coat. Cover and cook for 2 to 3 more minutes, or until the bok choy is tender and the glaze is slightly thickened.
- Garnish and Serve: Remove from heat and garnish with sesame seeds and scallions if desired. Serve warm.
Notes
- For a spicier version, add a dash of chili flakes or a drizzle of chili oil.
- You can substitute tamari for soy sauce to make this recipe gluten-free.
