  • 1 ½ pounds Brussels sprouts (trimmed and halved)

Miso Marinade:

  • 2 tablespoons white miso paste
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon maple syrup
  • 1 tablespoon sesame oil
  • 1 tablespoon olive oil
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic (minced)

Garnish:

  • 1 tablespoon toasted sesame seeds
  • sliced green onions for garnish

Instructions

  1. Preheat the oven: Preheat the oven to 425°F (220°C).
  2. Miso Marinade: In a large bowl, whisk together the miso paste, soy sauce, rice vinegar, maple syrup, sesame oil, olive oil, ginger, and garlic until smooth.
  3. Coat Brussels sprouts: Add the Brussels sprouts to the bowl and toss until evenly coated.
  4. Roast: Spread the sprouts on a baking sheet lined with parchment paper. Roast for 25–30 minutes, flipping halfway through, until golden and crispy.
  5. Finish: Sprinkle with sesame seeds and green onions before serving.
