Ingredients
Scale
Mixed Berry Filling:
- 4 cups mixed berries (such as blueberries, raspberries, strawberries, and blackberries)
- 1/2 cup granulated sugar
- 1 tablespoon cornstarch
- 1 tablespoon lemon juice
- 1/2 teaspoon vanilla extract
Biscuit Topping:
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 cup cold unsalted butter (cut into small cubes)
- 1/2 cup buttermilk
Instructions
- Preheat oven to 375°F. Lightly grease a 9-inch baking dish or deep pie dish.
- In a large bowl, combine berries, sugar, cornstarch, lemon juice, and vanilla. Stir gently and let sit while preparing the topping.
- In a separate bowl, whisk together flour, sugar, baking powder, baking soda, and salt. Cut in the cold butter until the mixture resembles coarse crumbs.
- Stir in the buttermilk just until the dough comes together. Do not overmix.
- Pour the berry mixture into the prepared baking dish. Drop spoonfuls of the biscuit dough over the top, leaving some gaps for the berries to bubble through.
- Bake for 35–40 minutes, or until the topping is golden and the filling is bubbling.
- Let cool slightly before serving warm with vanilla ice cream or whipped cream.
Notes
- You can use fresh or frozen berries (no need to thaw frozen).
- For a sweeter topping, sprinkle a little coarse sugar over the dough before baking.
