Description

This Mixed Berry Cobbler Recipe combines a medley of fresh berries with a tender buttermilk biscuit topping, creating a delightful dessert perfect for any occasion.

Ingredients

Scale

Mixed Berry Filling:

  • 4 cups mixed berries (such as blueberries, raspberries, strawberries, and blackberries)
  • 1/2 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • 1/2 teaspoon vanilla extract

Biscuit Topping:

  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup cold unsalted butter (cut into small cubes)
  • 1/2 cup buttermilk

Instructions

  1. Preheat oven to 375°F. Lightly grease a 9-inch baking dish or deep pie dish.
  2. In a large bowl, combine berries, sugar, cornstarch, lemon juice, and vanilla. Stir gently and let sit while preparing the topping.
  3. In a separate bowl, whisk together flour, sugar, baking powder, baking soda, and salt. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Stir in the buttermilk just until the dough comes together. Do not overmix.
  5. Pour the berry mixture into the prepared baking dish. Drop spoonfuls of the biscuit dough over the top, leaving some gaps for the berries to bubble through.
  6. Bake for 35–40 minutes, or until the topping is golden and the filling is bubbling.
  7. Let cool slightly before serving warm with vanilla ice cream or whipped cream.

Notes

  • You can use fresh or frozen berries (no need to thaw frozen).
  • For a sweeter topping, sprinkle a little coarse sugar over the dough before baking.
