Cream Cheese Frosting:

  • 8 oz cream cheese (softened)
  • ¼ cup unsalted butter (softened)
  • 1½ cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven and prepare muffin tin: Preheat oven to 350°F and line a 12-cup muffin tin with paper liners.
  2. Mix dry ingredients: In a large bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
  3. Combine wet ingredients: In another bowl, beat eggs, oil, Greek yogurt, brown sugar, and vanilla until smooth. Stir in carrots and pineapple.
  4. Combine wet and dry ingredients: Add wet mixture to dry ingredients and stir until just combined. Fold in nuts and raisins.
  5. Bake: Divide batter into muffin cups and bake for 18–22 minutes until a toothpick comes out clean.
  6. Make frosting: Beat cream cheese and butter until creamy. Add powdered sugar and vanilla, beat until fluffy.
