Description

This Monterey Chicken recipe is a delicious and easy-to-make dish that features juicy chicken breasts topped with barbecue sauce, melted Monterey Jack cheese, crispy bacon, fresh tomatoes, and sliced green onions.

Ingredients

Scale

For the Chicken:

  • 4 boneless, skinless chicken breasts
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 tablespoon olive oil

For Toppings:

  • ½ cup barbecue sauce
  • 1 cup shredded Monterey Jack cheese
  • 4 slices cooked bacon, crumbled
  • 1 medium tomato, diced
  • ¼ cup green onions, sliced

Instructions

  1. Preheat Oven: Preheat oven to 400°F (200°C).
  2. Season Chicken: Season both sides of the chicken breasts with salt, pepper, and garlic powder.
  3. Sear Chicken: In a large oven-safe skillet, heat olive oil over medium-high heat. Sear the chicken for 3 to 4 minutes per side until golden brown.
  4. Add Toppings: Remove from heat and brush the tops of the chicken with barbecue sauce. Sprinkle each piece evenly with shredded Monterey Jack cheese and crumbled bacon.
  5. Bake: Transfer the skillet to the oven and bake for 10 to 12 minutes, or until the chicken reaches an internal temperature of 165°F and the cheese is melted and bubbly.
  6. Finish and Serve: Remove from the oven and top with diced tomatoes and sliced green onions. Serve hot.

Notes

  • This dish pairs well with mashed potatoes, rice, or a side salad.
  • For a shortcut, use rotisserie chicken and broil with toppings for 3–4 minutes.
