Instructions
- Prepare the Coconut Centers: In a mixing bowl, combine shredded coconut, sweetened condensed coconut milk, and vanilla extract. Stir until sticky and well mixed.
- Shape the Candy: Scoop out tablespoon-sized portions and form into small rectangles or ovals. Place on a parchment-lined baking sheet and freeze for 30 minutes.
- Melt the Chocolate: In a microwave-safe bowl, melt dark chocolate and coconut oil in 30-second intervals until smooth.
- Coat the Coconut Pieces: Dip each chilled coconut piece into the melted chocolate, using a fork to coat. Let excess chocolate drip off and place back on the sheet.
