Lentil Mixture:
- 1 cup dry brown or green lentils
- 2 1/2 cups water or vegetable broth
Mushroom Mixture:
- 1 tablespoon olive oil
- 1 small onion (finely chopped)
- 2 cloves garlic (minced)
- 8 oz cremini or white mushrooms (finely chopped)
- 1 tablespoon soy sauce
- 1 teaspoon smoked paprika
- 1/2 teaspoon dried thyme
Additional Ingredients:
- 1/2 cup rolled oats
- 1/4 cup breadcrumbs
- Salt and pepper to taste
- Oil for cooking
Instructions
- Cook Lentils: Rinse lentils and cook in water/broth until tender. Drain and cool.
- Sauté Vegetables: Sauté onion, garlic, mushrooms, soy sauce, paprika, and thyme.
- Mix Ingredients: Combine lentils, mushroom mixture, oats, breadcrumbs, salt, and pepper.
- Form Patties: Shape into patties and let rest.
- Cook: Pan-fry patties until browned and heated through.
- Serve: Enjoy on buns with desired toppings.
Notes
- To make the burgers gluten-free, use certified gluten-free oats and breadcrumbs.
- Burgers can also be baked at 375°F for 20 minutes, flipping halfway through.
